  • 1/2 cup battered mix
  • 1/4 cup water
  • 1/2 panko bread crumb
  • 1 cup frying oil
  • 1/4 cup cabbage,cut into 1 square inch
  • 8 one-inch slices of zucchini
  • 8 quarter-inch slices of carrot
  • 8 one-inch slices of Chinese eggplant
  • 8 pieces broccoil
  • 5 thai basil leaves
  • 1 tablespoon red curry paste
  • 1 cup coconut mikl
  • 1 teaspoon sugar,fish sauce

InstructionsInstructions  Mix battered mix with water, stir until it’s thicken. Dip shrimps in the battered mix and then with panko bread crumbs. Deep fry until golden and crispy outside. Set aside. Heat coconut milk in the pan,add red curry paste and season with fish sauce and sugar .Wait until boiled, and then add cabbage,zucchini,carrot,eggplant and broccoli. After the vegetables are cooked, add Thai basil leaves and put the sauce on top of shrimps. Serve and enjoy right away.
