  • 1,000 grams rack of lamb, separated into two drums per piece
  • 100 grams massaman curry paste
  • 3 cups coconut milk
  • 1/2 cup roasted peanut
  • 1 cup potatoes,cut into one-inch cube
  • 1/4 cup fish sauce
  • 1/2 cup carrot ,cut into one-inch cube
  • 1/2 rice wine or white table wine
  • 1/4 cup sugar
  • 1/4 cup tamarind sauce
  • 1/2 Japanese rice vinegar
  • 4 cup water

InstructionsInstructions  Apply rice cooking wine or white table wine to your already cut rack of lamb, rest for 10 – 15 minutes. Boil 4 cups of water in a pot, add ½ cup of vinegar.Place the pot until n half-way cooked, empty the water Reserve. Heat 1 cup of coconut milk, add massaman curry paste, and simmer for about 5 minutes to release the aroma of curry paste, then add lamb, and the rest of coconut milk, simmer until tender for at least 20 minutes. Add roasted peanut,potato,white onion, and carrot. Season with sugar, fish sauce, tamarind sauce.
