  • 1,000 grams chicken breast,sliced into small pieces
  • 100 grams red curry paste
  • 4 cup coconut mikl
  • 5 kaffir lime leaves
  • 1/2 cup thai basil leaves
  • 1 cup red and green peppers,cut small pices
  • 250 grams semi-ripe mango ,cut into l inch cube
  • 2 tablespoons fish sauce
  • tablespoons sugar

InstructionsInstructions  Mix red curry paste with 1 cup of coconut milk. Heat on stove and stir slowly to release the aroma of curry paste and until mixtures are blended together. Add chicken breast and simmer until cooked. Season with fish sauce and sugar Wait until boiled then add basil and kaffir lime leaves, bell peppers and mango The taste of the dish should be more salty and then sweet followed. In Thailand we would use Nam Dok Mai mango .in the United States, I would recommend mango from Latin Americas. One you add mango ,serve right away, it tastes better!
