InstructionsInstructions  Heat half of the coconut milk in the pan, medium to high heat,addthe prepared choo chi curry paste and stir to release the aroma of the spice, until the coconut milk reduced down by 25% Add the rest of the coconut milk, and season with sugar and fish sauce. Poach salmon in the curry sauce until cooked. Sprinkle with kaffir lime before serving. You may serve this dish with steamed vegetables. Choo Chi Curry Paste 5 large dried Thai chili (soaked in water until tender) ½ teaspoon of finely sliced kaffir lime zest 1 teaspoon of cilantro roots 1 teaspoon of salt 1 tablespoon of galangal 1 teaspoon of shrimp paste 2 tablespoons of chopped shallot or red onion 2 tablespoons of chopped garlic Finely blend all ingredients into paste by food processor or traditional mortar. Set aside
