Basil Eggplanit Tofu

Thai basil leaves

oyster sauce
1 teaspoon

fermented soybeans

Instructions
Heat oil in the pan, medium to high heat. Fry tofu until golden brown –crispy outside and soft in side –set aside.Fry eggplant until being not-quite-cooked, set aside. Drain out most of the oil and leave just a little bit for stir-fry .increase the heat to high, add garlic And stir until light brown, then add with onion, fried tofu and eggplant. Season this dish with oyster sauce, fermented soybeans, sugar and soy sauce. Lastly, add red bell pepper, green onions, and Thai basil. Tip: Add more vegetables as broccoli, zucchini and carrot if you like
